This syrup offers the decadent taste of rich cocoa without the added sugars. Perfect for those monitoring sugar intake or counting calories, it's a versatile topping for desserts or adding to coffee. Yields 16oz (473mL)

  • In a medium saucepan, mix dry ingredients thoroughly using a whisk, ensuring the xanthan gum is evenly distributed.
  • Gradually add wet ingredients to the saucepan, mixing continuously, and cook over medium heat for approximately 20 minutes, stirring often.
  • Use a silicone spatula to frequently scrape the saucepan's bottom to prevent any clumps from forming.
  • Lower the heat to a simmer and continue cooking for 10 more minutes.
  • After simmering, scrape the bottom again, whisk the mixture vigorously, then let it cool for about 30 minutes.
  • Transfer the mixture into a condiment squeeze bottle or mason jar, using a funnel if necessary.
