Ingredients
- Dry
40g cocoa powder
.6mL (1/8 tsp) xanthan gum
pinch of Kosher salt
- Wet
160mL filtered water
80mL vegetable glycerin
5mL vanilla extract
Directions
- In a medium saucepan, mix dry ingredients thoroughly using a whisk, ensuring the xanthan gum is evenly distributed.
- Gradually add wet ingredients to the saucepan, mixing continuously, and cook over medium heat for approximately 20 minutes, stirring often.
- Use a silicone spatula to frequently scrape the saucepan's bottom to prevent any clumps from forming.
- Lower the heat to a simmer and continue cooking for 10 more minutes.
- After simmering, scrape the bottom again, whisk the mixture vigorously, then let it cool for about 30 minutes.
- Transfer the mixture into a condiment squeeze bottle or mason jar, using a funnel if necessary.
